In September of 2006, 18th Street Deli moved its operation into a brand new state of the art 30,000 sq. ft. Culinary Center. This new Culinary Center houses an executive chef operated production department and an experienced office staff, with online ordering available. These advances keep 18th Street Deli on the cutting edge of new vending products and
ordering and reporting technology.

18TH STREET DELI - FOOD SAFETY PROGRAM
We hold food safety at the highest level of governmental standards. We start by re-quiring all of our supervisory staff to attend a two-day off site SERVE SAFE course, which is the only nationally recognized course in the industry for FOOD SAFETY. We then take all of our general staff, from kitchen to truck drivers, and give them an on site version of the same course. They are then tested and must pass before they can start their employment. This ensures that they have detailed knowledge of such things as cross contamination, utensil sanitation, personal hygiene, hairnets, gloves, product temperatures, and a general awareness of product integrity and freshness. We have an in-house monitoring system where there are 32 cameras through out the plant and distribution center watching for violations of our standards.
If there is a violation, immediate action can be taken to correct it. Our Sanitation and Quality As-surance Director has direct access on her computer for monitoring the system both at her desk and at home. All of our coolers and freezers are monitored by an outside company 24/7 for any temperature changes outside of the accepted range set by the National Food Safety Board. Should a corrective action need to be taken, they have the phone numbers for two-refrigeration maintenance companies. All of this is backed up with an on site 80kw diesel powered generator that will run our complete operation without any gaps.
We currently own 17 refrigerated trucks, all with state of the art G.P.S. tracking systems that allow us to monitor location, speed, and cargo temperature 24/7. Our dispatcher has this system on his desk at the office and at home. Our plant is currently inspected by the Wayne County Board of Health, the Food and Drug Administration, the Michigan Department of Agriculture, the United States Army, and we are USDA inspected. We are listed in the Directory of Sanitar-ily Approved Food Establishments for the Armed Forces Procurement. We have also hired two outside companies for in house random inspections: one handles bacterial testing and the other handles facility sanitation inspections. These companies act as our consultants to continually improve operational procedures. 18th Street Deli oper-ates under the federal safety and sanitation program known as HACCP.
